Tasting notes

The early winter of 2009 on Naches Heights proved perfect for producing ice wine, the rarest and most precious of all wines.  We let our Semillon (the grape used in Bordeaux's famed Sauternes) stay on the vine at Wilridge Winery until December 13 -- a day when the temperature on Naches Heights stayed below 15 degrees Farenheit.  The frozen grapes were hand havested by the Beveridge, Cordova, and Ellis families and immediately pressed in a small wooden hand cranked press borrowed from other friends.  The result was a rich, golden juice with over 36 degrees of sugar!  Fermentation was stopped after a few days to retain the natural sweetness of the grapes.  Only 103 bottles of this rare elixir were produced. 

Like a good Sauternes, Wilridge Semillon Ice Wine is an exquisite as desert on its own or in combination with fresh fruit and cheese.  One of the classic wine and food matches is Sauternes with Foie Gras.  In fact, it was Sauternes with Foie Gras at a Bistro in Paris that caused Wilridge co-owner Lysle Wilhelmi to give up being a vegetarian.  Maybe it's not the most politically correct wine pairing, but it is delicious.
